After pressing, the wines descend into the first underground cave. Here they remain until the end of malolactic fermentation. After racking (only by gravity) the wines descend into the second cellar, deeper and colder. Here they remain until bottling.

3) Domaine de la Romanée-Conti La Tache Grand Cru Monopole

Domaine de la Romanée-Conti is the most well-known wine producer in Burgundy. Based in the Burgundian town of Vosne-Romanée, the Domaine sells wines from eight different grand cru vineyards that stretch along the Côte d’Or.

4) Leroy Domaine d’Auvenay Chevalier-Montrachet Grand Cru

Domaine d’Auvenay is a small winery in Burgundy, France, located in Saint-Romain. Part of the Leroy empire, it is named after Lalou Bize-Leroy and was previously run by her husband Marcel Bize until his death in 2004.

Georges Roumier founded his vineyard in 1924, which today comprises approximately 28 hectares in Burgundy, France. The Roumier vineyards are located in the regions of Chambolle-Musigny, Morey-Saint-Denis and Corton-Charlemagne.
